This is a post you will want to bookmark if you love smoky barbecue flavors in an all-vegetarian meal. It is easily my new favorite vegetarian dinner, and soon you will see why.

Beer! Not a light beer, but something flavorful, amber or darker, like this Sam Adams Irish Red.

Half a can of chopped chipotles in as much adobo sauce as you can squeeze out the can. Reserve the rest of the chipotles for later, maybe to make some salsa?

I decided to use up the beans I had in my cupboard, a can of pinto beans and a can of kidney beans, draining and rinsing them before getting started. I am pretty grossed out by the liquid that comes in the can!

Making these beans was simple, but if you allow a little bit of extra time for them to simmer on the lowest heat, you reap the flavor benefits. Into the pot went the beans, the beer, a heaping tablespoon of molasses, and the chopped chipotle in adobo sauce. Mix up all of the ingredients, and simmer until a nice, syrupy sauce has formed.

Serve atop a tasty wedge of corn bread, topped with grated sharp cheddar or another cheese of your choice.

Being totally stuffed up and feeling icky with allergies has really killed my appetite, but this dinner brought it back. I topped it with some pickled cabbage slaw that I made earlier in the week for a zesty, crunchy contrast to the hot, smoky beans and soft, somewhat sweet bread. A bowl of heaven, I tell you! Cooking with beer is where it’s at.

I long for the days when it is too hot to cook, the days where sprawling on a chair near a fan with a cold drink or some ice cream is all you can do. After this winter, I even long for those too-hot nights where it feels like mid-day at midnight. Ask me in August, and I will probably be singing another tune; I don’t love extreme temps either way, but I just feel so ready for heat right now.

As soon as I heard that this week would be warmer, I started planning out no-cook meals for picnics at home. Literally, sometimes we eat on the kitchen floor. It’s fun.

Ever since the Scottish salmon event I attended, I had been planning a night for a smoked salmon platter for dinner, and this Monday was perfect for it.

Crucial ingredients included my favorite Vermont Creamery crème fraiche and some dark pumpernickel bread.

The star of the show was Nova salmon from Trader Joe’s. This comes in at about $7.99, but it lasts for several meals. Since it is such a good source of protein and other nutrients, and finding a protein I like is difficult, I call this a worthy splurge.

Dinner was assembled in about five minutes. I chopped some tomatoes, red onion, and cucumbers. I meant to also include hard boiled eggs but remembered way too late. Next time for sure. We plopped ourselves on the floor and piled our bread high with crème fraiche, veggies, and salmon and caught up on our days. It was a lot of fun and a much-needed relaxed dinner. Sometimes I get so wrapped up in photos and having meals to blog about that I don’t even enjoy them.

We were having guests over late in the evening for the TasteLive! event so I decided to put out some snacks. I whipped up a last minute dip that was pretty spectacular. It was so easy I thought about NOT sharing on the blog, but it was so good I had to.

Three cloves of garlic, a can of white beans, and about three tablespoons of chopped sundried tomatoes, into the blender or food processer.

Blend everything together until smooth. I served it with some whole wheat crackers, and it was devoured. The dip doesn’t need oil because white beans are so creamy, so this is a really healthy, light option. I used the leftovers as a spread for a turkey sandwich.

Once the really warm weather comes, I will be looking for lots of fun, no-cook recipes. Do you have favorites for when the mercury starts to rise?

It’s going to be a great week. I have a lot of fun events coming up as well as a few interesting meetings, so I am looking forward to the week ahead. Still, I am tired. This weekend we went to visit my family in NJ, and due to my husband’s crazy work schedule, were only able to go for one day. We left before 8 am on Saturday and left my mom’s at 11 on Sunday with five hour car rides on both sides.

As a result, I am pretty tired, but it was so worth it!

I was treated to some great birthday gifts including an Anthropologie gift card to get this dress and some great new cooking and baking stuff which was wrapped in wrapping paper decorated by Isabella.

The weekend also brought cupcakes from a local bakery.

We had dinner out and spent the weekend just hanging out. It was perfect.

But when we got home, both tired from the long journey, we did not feel like grocery shopping. I had to get creative to get something together for lunch for the next few days.

Enter, three cups of black beans we had soaking over the weekend.

And a little gift from my friend Megan, charcoal wheat which had also been soaking over the weekend.

I grabbed a few green bell peppers that were on their way out and chopped them up, along with a habanero and half of a red onion.

Sautéed the vegetables in a little bit of oil

Then I added in the beans and charcoal wheat, a few sprinkles of cumin and garlic powder, and stirred.

We’ll both be eating this for our next few lunches, most likely cold, as a salad, so I am glad that it tastes good and is healthy! Smile
