Travel, Wine, and Dine has definitely been focusing more on the travel and wine lately, with a departure from the recipes and cooking that used to be a bigger part of my blog and my life. Life happens, people change, and there are times when being in the kitchen is a little less appealing that being out and about, working really hard on growing my career, and seeing as much of the world as possible.

twice baked sweet potato mash

I do still cook, in between nights out and takeout and those nights where cereal is the only thing that is possible. I’ve been trying to make lots of entree salads as well as shrimp, veggies, some sort of sauce, and pasta.

This twice baked sweet potato dish was inspired by one of the many articles that I have been reading, trying to find quick, healthy recipes for weeknight meals. While it’s getting warmer out, nights are still chilly, so this sweet potato mash is perfect either on its own or with main dish. Greek yogurt adds in protein, and the sweet potato and kale are chock full of nutrients.

How to make it:

I simply baked two large sweet potatoes until they were soft, scooped out the filling and mixed it with the following:

2 cups chopped kale and 1 cup chopped yellow onion, sautéed in oil until soft

1 cup plain Greek yogurt

1/2 cup shredded parmesan cheese

dash garlic powder, sea salt, and pepper, all to taste

I pureed the ingredients together until soft and silky, then topped with a generous sprinkling of crumbled feta. I put back in the oven at 400 for about 10 minutes and this easy Meatless Monday meal was ready to serve.

I’m excited for gardening and farmers markets and all of the beautiful seasonal produce they will bring!

Traffic. Snow. Traffic. Gray. Slush, Repeat.

If you live in the Boston area, that pretty much sums up your life lately. Our regular 30 minute commute has turned into two hours. It’s nearly impossible to walk down a street, to park anywhere, even to see out our first floor windows after all of this snow.

I work in East Cambridge, and for almost two years, I have been wanting to eat at The Helmand.  I heard so many great things, and yet we just never made a point to get there. That is, until last week on one of the days Boston was in total gridlock.

It took my husband almost two hours from Harvard Square to East Cambridge, around four miles. It was cold and slippery, and warm, spiced Afghani food sounded perfect. It was.

The Helmand is bright, beautiful, and cozy. Everyone who works there is welcoming, kind, and knowledgeable.

The Helmand

The blue and yellow plates brought a little sunshine to our evening.

The Helmand

We had a really hard time deciding on what to order, so we decided on a few appetizers. Always a pumpkin lover, I had to have the Kaddo.

Sweet baby pumpkin topped with a rich and tangy garlic yogurt was heaven. I feel like this dish is pretty healthy and full of vitamins too, so it wasn’t too much of a splurge, not like the boxes of Cheez-its I have been downing during blizzards, anyway.

pumpkin in garlic sauce

Warm, pillowy bread with a variety of sauces, gave us something to use as a scoop for our yummy pumpkin. sauces at the helmand

Aushak

Aushak, Afghan ravioli filled with leeks and scallions, served on yogurt-mint topped with ground beef sauce, was a hearty plate full of flavor and warmth. I loved that the food at the Helmand was spiced in a way that was warm but not burning off your tongue.

Bowlawni

For my entree I went with Bowlani, brick oven baked twin pastry shells, one filled with leeks and scallions the other filled with spiced potatoes. garnished with yogurt and mint. Again, these were full of warmth and spices, comforting, filling, and just delicious.

The Helmand was an utter delight and a much-needed bright spot in a series of dreary days. We’re trying our best to eat healthy and exercise, but this winter has made that a challenge. I am definitely feeling seasonal blues, and going out a couple of times a week seems to help.

I recommend a visit to the Helmand if you want a taste from afar without getting on a delayed flight. In the meantime, please send us warm weather.

I’ll be perfectly honest and let you know that I want nothing to do with the Super Bowl. I find professional football to be boring (College is way more fun.), and the NFL has really not been a model citizen. . . well anytime in recent history. But I do love snacks and an excuse to get together. This year I will likely cozy up with a fire and a good movie or book, but I wanted to share some of the Super Bowl snacks that have caught my eye as I browse the web (and my own blog, of course).

Guinness Beef Stew

Guinness Beef Stew – I love recipes you can prep before company comes, and this one just gets better as it slowly simmers.

Pulled Pork in Ginger Beer – This is another make ahead of time recipe, with sweet, tangy, and spicy flavors and endless options for topping. Lots of pickles for mine!

Spiced Caramel Bacon Popcorn from ArtBar at the Royal Sonesta – Full disclosure, I work here. This popcorn is relatively easy, and everyone LOVES it. It is an addictive snack, so just double the recipe to be safe.

Buffalo Chicken Sliders by Boston Chic Party – This is one of my new favorite blogs, and since I love all things buffalo chicken, these are perfect.

Habanero Garlic Brushed Calzones from Eat Live Blog – Pizza dough with lots of flavor goes perfect with a good cold beer and a cold Sunday night, don’t you think?

Cashel Blue Cheese Dip from Kerrygold – Cashel Blue is such a delicious cheese, and this simple dip looks amazing.

Chicken Enchilada Dip from BranAppetit – Brandi has been one of my favorite bloggers for years, and this dip looks perfect for the big game.

Beer Mac and Cheese from How Sweet Eats – Beer Mac and Cheese? yes.

Super Bowl Cocktails from We are not Martha – Beer isn’t the only drink welcome at Super Bowl parties! Cocktails pair well with junk food, as does sparkling wine!

Salted Chocolate Turtle Graham Bars from Confessions of a Chocoholic – You have to have dessert, and who better than to choose a recipe from than Bianca!
