Hello faithful readers! I have missed you. I had a great weekend starting with the chocolate bar preview at the Langham Hotel, lots of cooking, boating (I made a silly little video, would it be lame to upload it?), eating at a couple of Dorchester restaurants, and more cooking, plus some online shopping and a slow acceptance of fall’s imminent arrival.

I’m happy to say my blog is fixed, and I am SO excited to start cranking out posts. It’s kind of nice that I missed it! Since I am a little behind and could not blog until late last evening, I thought I would share a super simple recipe I brought on board the boat this weekend for hanging out with friends. It’s an easy, creamy eggplant and tomato dip that is made flavorful with just a few simple ingredients.

1 whole eggplant, cut into slices and generously coated with olive oil

6-8 Roma tomatoes, cut in half, coated with olive oil

1/4 cup olive oil

1 teaspoon garlic powder

1 teaspoon crushed red pepper flakes

1 clove fresh garlic

eggplant and tomatoesToss the eggplant and tomatoes together in the oil, garlic powder, and crushed red pepper. Put into a 420 oven for 40 minutes. In order to get even roasting, I cut the eggplant thin and the tomatoes thick. I only like eggplant that is falling-apart cooked, and I wanted to make sure it got there.

I think the 40 minutes did the trick. Once the veggies were cooled, I added them, along with about 1/4 cup of olive oil, plus the juices that were created in cooking to the blender with a clove of garlic.

I blended until smooth, adding a bit more olive oil and a pinch of sea salt before packing up this dip to store away for the next day. Except that I didn’t pack it all away. I ate almost half of the tupperware container, first with carrots and then tortilla chips. I wasn’t even planning on blogging this dip, but in its simplicity, it is pretty spectacular. We ate it the next day on bagel chips which were awesome, and I think it would also be great with pita and a simple tzatziki. It definitely got me thinking of a Mediterranean-inspired party or dinner, and I was happy to enjoy the flavors of summer as they hang out in my kitchen a little longer.

Food in Egypt cannot be compared to that of other countries in the region; it has its own flavors and tastes. It stands alone. Holidays to sharm el sheikh and other resorts in the country should always have an itinerary dedicated to sampling the various dishes on offer.

With many national dishes, including Kushari, fuul, falafel, and kebabs, Egyptian food is a colorful array of taste and spices. The country also offers up the chance to taste some of the home grown juices and fruits, including sugar cane, orange, dates and others.

The street food sold in Egyptian cities and towns is some of the best food in the world. Prepared from fresh ingredients in front of your eyes, it is hard to resist.

One of the best dishes offered up by the street chefs is Kushari. It is a dish which consists of a base of rice, brown lentils, chickpeas, macaroni, and a topping of Egyptian garlic and vinegar and salsa. The ingredients are all mixed together to create a palatable creation so sumptuous that you need to try it at least twice. The falafel created by the street sellers is both light and tasty; the little balls of chickpeas are served warm with sauces and salad, creating the perfect midday meal.

If you are looking for restaurants in Sharm el Sheikh then the market area in Old Sharm is best known for its seafood restaurants. The popular Sinai Star seafood restaurant offers three courses for just over $20. Another great eating spot in this area is Fernando’s Italian restaurant. The food prepared in this Italian is freshly prepared in a family kitchen. None of the restaurants in this area serve alcohol so make sure your bring your own.

The Na’ama Bay area also offers some great grub. Restaurants like the Little Buddha, which sells sushi, and the Tandoori Indian restaurant are brilliant places to sample world foods.

Anyone on a last minute holiday to Egypt should take the opportunity to taste the delightful food on offer in the area. Whether it is world food or freshly prepared street food, you will be blown away.

A gorgeous Saturday in Boston Harbor played host this past weekend to the 9th annual Flip Flop Regatta. Each year, The ALLY Foundation and friends organizes this weekend of sailing and partying to raise awareness for a very important cause.

This year, we were kindly invited to enjoy the regatta from a very special spot, aboard the boat carrying The ALLY Foundation founders and Ally’s family and friends.

The spacious vessel featured a beautiful kitchen and living room as well as an upper deck, back deck, and bow deck, a bathroom, and more rooms below, which we did not see.

As we drove out of Charlestown Harbor, we passed right by the place where the Flip Flop Regatta evening festivities would take place, decked out in ALLY Foundation pink and green.

In addition to enjoying a relaxing day on the water with gorgeous views, there was also an array of gourmet delights on board.

Chef and owner of Carmen ( a fabulous little restaurant in Boston’s North End, one of my favorites), Jeff Malloy, spent the afternoon whipping up delectable treats including grilled shrimp, clams with grilled garlic bread, sausage, meatball sandwiches and pasta salad.

And there were also, of course, North End baked goods for that sweet tooth.

The food was incredible, and it was made more impressive by the fact that the chef was cooking while standing on a rocking boat. There were some waves out there!

Sailing for a Change

Luckily, for the sailors, that also meant there was wind to bring them from the outer harbor back to Charlestown. 70 sail boats all vying to get across that finish line was quite the lovely sight.

Our hosts were warm and wonderful, as always, and we spent the day meeting many interesting and fun new people. I am so grateful to have been a part of their day and will definitely be marking my calendar to attend the Flip Flop Regatta tent parties next year.
