Hi everyone! I am currently in Northern Ireland. Please welcome Emily from A Cambridge Story as today’s wonderful guest poster!

Good things come in small packages and, as we near Superbowl weekend, I have been brainstorming ways to shrink game-time favorites into tiny, bite-sized snacks. Since pizza is a routine crowd pleaser, I thought mini pizza bites were a good place to start.

I made two varieties:tomato, pepperoni with parmesan cheese and balsamic glazed caramelized onions with goat cheese.

To start, cut a ball of whole-wheat pizza dough in quarters and let the dough sit until you have four, round balls. With the aim of mini-pizzas, I found working with smaller batches of dough much more manageable.

Meanwhile, preheat the oven to 400 degrees and begin caramelizing 1 medium onion (15 minutes or until brown and sweet).

Roll each ball of dough until thin (perhaps slightly thinner than you would for a regular pizza). You will want to cut small circles of dough to fit a min-muffin pan. A 3″ diameter drinking glass served as a great stencil.

Place dough circles in greased muffin tin.

At this point, begin assembling. For the tomato-pepperoni pizzas, simply layer 1/2 tsp of pepperoni-flavored pesto (purchased at Whole Foods), a thin slice of a cherry tomato and a pinch of parmesan cheese.

For the other pizzas, layer 1/2 tsp of caramelized onions and a crumble of goat cheese. The balsamic glaze will be added once pizzas are cooked.

Bake in oven for 15-18 minutes until crusts are baked and cheese is melted/browned. Five minutes before the pizzas are done cooking, reduce 1/4 cup of balsamic vinegar on the stovetop until thick and sweet. Dollop the glaze on top of the goat cheese pizzas (or both, if you’re so inclined!).

The topping possibilities are endless, though I really enjoyed the basic pepperoni variety, which was strangely reminiscent of Elio’s pizza. (Wait, is that a good or a bad thing?)

Perhaps a bit higher up on the sophistication ladder, the caramelized onion, goat cheese and balsamic glaze pizzas offered a great balance of sweet and tart. Fresh rosemary would be perfect with them!

Whatever flavors you desire, these little nuggets of pizza-y goodness can be easily popped in your mouth and consumed while screaming at Tom Brady to cut his hair rooting for your favorite team. Or, perhaps more realistically, while you are gabbing about anything other than football as the game blares in the background.

Superbowl snacks

Are you planning on watching the Super Bowl? What snacks will you be making?

Hello Travel Wine Dine readers! My name’s Daisy and I blog over at Indulge Inspire Imbibe. I offered to write a guest post for Meghan while she spends some time in Ireland.

It has been an extremely snowy winter here in New England thus far, or haven’t you noticed?  Instead of dreading the massive storms that seem to fall upon us every week, I embrace them by experimenting with libations to warm the soul. Last week I crafted a Hot Toddy and while it stands as a favorite winter warmer, the Hot Buttered Rum isn’t so bad itself. Switching up the cocktail routine (it’s a long winter after all) proves easy and satisfying.

Hot Buttered Rum Ingredients

Ingredients:

1 small slice soft butter
1 tsp brown sugar
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg

1/4 tsp vanilla extract
2 oz dark rum

hot water
My favorite type of dark rum is Goslings Black Seal. (I usually have some on hand for mixing Dark-n-Stormys in the summertime!)

Gosling's Black Seal Rum

Muddle the butter, brown sugar, cinnamon and nutmeg in the bottom of a glass or Irish coffee mug.

There’s just something about the fluffy white stuff falling from the pale blue skies (okay, sometimes they are dark and gray, whose keeping score) and blanketing the earth that lifts my spirits. It evokes an inner happiness, a feeling of pure delight.

With Hot Buttered Rums to keep me warm, let it snow!

What warm and cozy things do you look forward to in the winter?

The original plan for last night’s dinner was to continue using up every morsel of food we have in the house. With a swag bag full of beautiful Muir Glen tomatoes from the Garden at the Cellar/Muir Glen Vine Dining event and chicken drumsticks in the freezer, left over from my chicken adobo night, I set out to make a sort of hunters stew like the stew from Nigella Lawson’s Nigella Express.

I started by thawing the chicken and decided to cook it in vinegar as I did for the adobo recipe. Unfortunately, the chicken looked really wrong when it started cooking. Let’s just say there was a lot of blood, and it just kept coming. . . and so my stew became vegetarian.

Muir Glen

The ingredients: 1 can of tomatoes, 3 cloves garlic, crushed, and chopped finely, 1 can of white beans, rinsed, about 20 teeny tiny potatoes, and about 1/2 cup of orzo

garlic white beans

I know, two different starches in one dish; I was feeling physically pretty blah by the time I started cooking last night. I have been having a lot of fun with my really hard workouts lately, but as a result I don’t think I refuel enough.

I seriously chowed down on this dinner.

orzo

It was quick and simple. I boiled the potatoes in about a centimeter of water until the water was almost boiled away. To that I added the tomatoes, juice and all, a bit more water, and the garlic and cumin. Once everything was at a nice boil, I dropped in the orzo so that it could soak up the tomato goodness. At the very end, I mixed in the white beans, topped with crushed red pepper, and served myself a giant bowl.

Alongside a glass of Travessia Urban Winery Jester, a red blend made right here in Massachusetts, this meal was perfect comfort food and just what I needed to brighten up an exhausted day. Except, I really wanted nachos, and I still do.

I will be back later with a recap of the Boston Wine Expo, and for the rest of this week I will have lots of great guest posts from recipes to travel posts to a virtual tour of a US wine region. And I will be popping in here and there from Ireland to say hello, hopefully, so check back often!

Are you ready for spring yet? Disappointed smile
