Chillier temps call for warm drinks, and whether you’re relaxing alone with a good book or entertaining a group, the holiday season calls for a little extra deliciousness. Coffee is a constant in our household. We always, always consume it on work day mornings (On weekends we often linger over cups of Irish tea.), and coffee also often pops up as part of dessert, after dinner, or even in dinner recipes.

chocolate orange coffee Recently Gourmesso reached out to me to see if I wanted to try some of their Nespresso-compatible coffee capsules. I love my Nespresso machine and am always on the lookout for less expensive capsule options, so of course I said yes!

Gourmesso sent me a ton of different samples, and in addition to making a roast with a Gourmesso espresso marinade, I also decided to craft a cozy hot coffee drink for the holidays.

One of our favorite snacks when we are in Ireland is Jaffa Cakes, delicious little sponge cookie discs topped with an orange jelly and covered in chocolate. Chocolate and orange go so well together, and I knew that the Gourmesso Soffio Cioccolato would be the perfect base for a Jaffa Cake coffee drink.

 

Gourmesso Coffee

I started by brewing full cups of the Gourmesso coffee in my Nespresso machine. To each Irish coffee glass I added a half shot of Godiva liqueur and Grand Marnier. . . maybe a little more than half a shot. Experiment with measurements until your coffee is just right for you. You might also want to add a splash of Bailey’s Vanilla to stand in for the cookie part of the Jaffa Cake. As you can probably tell, the options for customizing your own festive coffee drink are endless, but you should definitely start with a quality coffee base.

Godiva and Grand Marnier

I loved the citrusy note of orange as a refreshing counterpart to the sweetness of the Godiva and the richness of the coffee. These coffee drinks are certainly a fun way to warm up this winter.

Gourmesso Coffee

Thanks to Gourmesso, one lucky reader can enjoy five different Gourmesso roasts or flavors. They’re allowing me to host a giveaway for 50 capsules. They have 20 different coffee blends at the moment and are expanding that line every year.

A few of my favorites include the Colombia Arabica Mezzo and Bolivia Pura Mezzo. I love a good dark roast coffee, and these are smooth and just lovely.

Because it’s Monday, and somehow Mondays during the holiday season are extra hard to get through, I’m sharing a few holiday wine and food ideas. Whether you’re entertaining for 10 or more or just having a quiet night for one or two, it’s worth treating yourself to something special this season.

And let’s face it, we’re all preoccupied with food, wine, and fun this time of year, and you’re already counting down to the weekend despite the fact that it’s only Monday (and I have to work 8:30 – 4:30 on Sunday; Saturday is still a day off!).

Greet your guests (or just sit back and relax with a special someone) with oysters and little glasses of your favorite dry bubbly or wine of the sea.  The Martín Códax Albariño is really perfect for any seafood your serve but would work especially well with a chilled seafood platter of oysters, shrimp, and smoked salmon.

Serve your oysters with something a little different, perhaps a chipotle mignonette (my favorite!) or an apple ginger mignonette. Just because it’s cold doesn’t mean everything has to be heavy and overdone; the zip of a mignonette with some gorgeous briny oysters are a welcome brightness in the dead of winter.

While you’re mingling and listening to your favorite festive music (Harry Connick Jr.’s When my Heart Finds Christmas and Bing Crosby’s White Christmas are two great options.), have your main courses already on their way to perfection.

The below photo probably looks familiar, since I blogged about this red wine gravy roast not too long ago. Another way to make a rich, delicious roast is by first marinating it in espresso and spices, which I did this weekend. Gourmesso sent me lots of samples of their Nespresso machine friendly pods, and I have been loving their coffee in my cup as well as in recipes. I cooked my most recent roast in the slow cooker on low all day with some beef broth and three shots of espresso, along with spices like black pepper and garlic powder. Toward the end I added pearl onions and butternut squash and served with a sweet potato mash and a carrot salad (recipe coming later this week). A roast is an easy thing to set and forget, and it’s a fun place to play with bold flavors like strong coffee or a big Cabernet.

Broccoli Cheddar Casserole is a must-make side dish, no matter what your main course is. For Thanksgiving, I used Tiffani Faison’s recipe, which was featured in Spirit Magazine. Here’s a similar recipe; I used fresh broccoli and didn’t have lemon juice in mine but otherwise this is pretty close. Everyone at Thanksgiving was raving about this dish, and I will be making it for Christmas. It would go perfectly with a roast prime rib, which is what we normally eat on Christmas Day. A casserole topped with Ritz crackers and butter might not be fancy, but it is good.

Brussels sprouts are a great side to a beef roast, and they are particularly delicious when mixed with some form of bacon. Roast your sprouts until soft with thick cut bacon, red onion, and a splash of cider vinegar for a salty, tangy treat.

‘Most people think of cranberry sauce as a side for turkey, but I love a spiced ginger and orange cranberry relish with just about any protein. A cranberry cocktail is just as delicious; add a scoop of cranberry relish to the bottom of a glass and top with whisky or rum and soda water and ice. Instant sparkly, strong holiday cocktail!

If you’re like me, you’ll let your guests bring dessert. I am not one to care about or fuss with sweets, and it’s always good to have a dessert lover share his or her favorite!

It’s always been my dream to have a midsummer party, complete with fairy lights in the trees, small bites made with locally grown ingredients, and lots of chilled Champagne. I would love to add in a fire pit and lots of comfy seating and friends laughing and talking into the night. We now have the yard for it, but this year it doesn’t seem like we have had the time. We’re bogged down with some house projects and some major stress with a crooked former contractor (there will be SO much more on that when I am allowed to discuss), so entertaining hasn’t been a top priority.

Midsummer’s bounty from Red Fire Farm has buoyed my spirits during this past week, which was particularly tough. Our CSA share this week included carrots, sweet corn, celery, watermelon, cucumbers, zucchini, two cartons of blueberries, sage, basil, chives, green onions, kale, and lettuce.

While we’re not entertaining large groups, we did make time on CSA day for a family barbecue, My father-in-law is visiting from Ireland, and casual back yard get togethers are an easy way to enjoy our yard, family, and great food. We grilled the sweet corn right in the husks, along with some carne asada and buffalo burgers. A grilled Japanese eggplant from an earlier CSA share and a huge salad rounded out the meal.

I received a sweet surprise when I cut into the CSA watermelon; it was yellow! And it was so incredibly sweet and juicy and good. I love being messily covered in watermelon juice. Smile

I wanted to do some prepping of veggies from our share so they didn’t go bad quickly, so I decided to make an oven roasted salsa. I used CSA heirloom tomatoes, peppers, and an Aisla Craig onion along with a red tomato and red hot chili peppers from my own garden. Roasted up and blended together, the salsa is actually great cold with chips or hot as a sauce over chicken and veggies. I love how simple and healthy it is.

I took the sage and oven dried it at 180 degrees for a few hours. Sage to me smells like instant Thanksgiving, and sadly I am already thinking of the stuffing I will make that chilly morning in November. At least I will be able to bring a piece of my favorite season into it!

The rest of the week will include lots of salads and kale smoothies along with stuffed zucchini. I feel so grateful that we have amazing Massachusetts farms to bring food to our tables, and I look forward to sharing more!
