Eggplant Lasagna

There’s food in our kitchen again! Summer definitely kicked my love of cooking out the door for awhile, but I have been slowly meal-planning again, looking forward to spending time in the kitchen chopping, combining flavors, and looking forward to something delicious.

I’ve also been trying to create meals that are both comforting and healthy. As I round the bend to the final stretch of NYC Marathon training, I am feeling exhausted, and I could just chow on fries for all meals. Add in some coffee and maybe a little cake, and I would be all set.

Thankfully, there are lots of great blogs to inspire me. I’ve been loving the Detoxinista, and recently I made an eggplant-based lasagna based on her eggplant and goat cheese lasagna.

The cheese filling in this lasagna, a goat cheese and cauliflower puree, is the creamy, delicious highlight, sneaking in nutrients and fiber without taking away any scrumptiousness.

I started by prepping my eggplant. I cut it into thin slices (they should have been thinner), and marinating them in balsamic vinegar.

Next up, I prepped my “meat”, chopped mushrooms sautéed with garlic and onions with a bit of pepper and salt.

Then came the goat cheese and steamed cauliflower, which I mixed with oregano, basil, and garlic. Then I had a big spoonful before adding two eggs to bind the mixture together. I think these would make a great pancake appetizer with the eggs or a great veggie side dish on their own.

When all of the pieces were ready, I started to layer, first some Bobby D.’s Angry Sauce (which was not at all spicy, sad), then eggplant, cauliflower cheese, mushrooms, sauce, repeat. I baked the whole dish at 425 degrees for about 50 minutes, keeping an eye on it until the sauce was bubbling nicely. The final layer of cheese on the top should be nicely browned; if not a few minutes under the broiler can help.

A side note about the above sauce: after getting soaked on a bad run, freezing to death in the air-conditioned grocery store, and ruining my phone and a paycheck in the downpour, I was walking home with this sauce and it crashed through my grocery bag and hit the ground.

Thankfully it didn’t break; the bottom cracked and the lid was crushed. The worst part? The college kids walking behind me laughed at me! The day of this dinner didn’t start very well, but luckily it ended with a cozy dinner.

This lasagna is definitely something I will be making again. Even though it was noodle-free, the cheese and mushrooms really made it satisfying and filling.

Trying to cram in as much summer as possible, I have literally been eating cherries, tomatoes, peaches, and corn all day every day. I’ve been dreaming about a day when I am a zillionaire and can build a greenhouse in my back yard to grow all of my fruit and veggie favorites year-round. Wouldn’t that be amazing?

My pizza made with almond meal pizza crust is a big hit in this house, so this week, instead of a saucy, cheesy pizza, I decided to put a summery twist on it by making an almond meal flatbread with grilled peaches, arugula, prosciutto, and goat cheese.

The only real work involved in this recipe is making the almond meal crust. I simply mixed up two cups of almond meal, two eggs, and a drizzle of olive oil together and rolled it out as thin as possible. It was still too thick for my taste, but it’s a sticky dough. I’d love to perfect it to get a less thick, less dense crust.

I baked the crust at 350 for about 18 minutes.

While the crust was baking, I pulled together my other ingredients, including this Volpini pre-chopped prosciutto. I think I am done with prosciutto. I love the flavor, but it’s always so chewy!

I used my grill pan to get some grill marks on the peaches. They were beautiful, smelled great, and more importantly tasted so delicious.

Once the almond meal crust was done, I just topped it with all of my ingredients. I finished with a drizzle of olive oil and a sprinkle of sea salt.

The flavors in this dish were phenomenal as were the different textures. Unfortunately, the almond meal crust was really thick  which made it a little dry. I guess it works better as a saucier option to cut some of that dryness. Still, this was a tasty meal and one that packed a pretty good protein punch.

After a long boat day, easy meals are key. Usually, we end up ordering from Shanti, our favorite Indian restaurant, stopping by Savin Bar + Kitchen, ordering sushi from Van Shabu, or just eating random stuff around the house.

Lately I have been on a mission to eat better and to spend less on takeout that we sometimes don’t even really want. Planning ahead for meals that require a few ingredients and minimal preparation is key. This past weekend, after a long hot day out, I headed home and after a little shower and rest, I put together a pretty spectacular meal, if I do say so myself.

All it took were a couple of beefsteak tomatoes cut into thick slices, a red onion, also cut into thick slices, a handful of gorgonzola cheese, a splash of balsamic from our trip to Eataly, and a good steak from Whole Foods.

Since it was raining, we pulled out the indoor grill pan and threw on the steak, simply seasoned with pepper on both sides. Next up, I grilled the onion, just so that it was a little soft on the outside. I like onions to still have a little bite when cooked.

Finally, I put the tomato on the grill pan for about 30 seconds before taking everything off and assembling stacks of tomato, steak, and onion, topping each with a handful o gorgonzola and a drizzle of balsamic.

This dinner took less than 20 minutes, but it felt like a fancy restaurant meal. Good ingredients, simple preparation, and flavors that go well together all made for a delicious dinner. I love summer.
