Summer is in the air, and it’s the perfect time for patio drinks and dining in Boston. A couple of weeks ago, I checked out the expansion of RumBa at the InterContinental Hotel in Boston. I’ve long been a fan of RumBa (and even spent a Monday Funday there with my favorite ladies), so I was excited to see the expanded space while sipping on some of their legendary rum cocktails.
The modern and chic space was full of party-goers who enjoyed a steel drum band, transporting us to the Caribbean, despite the gloomy gray day. Edible centerpieces included paper-thin dehydrated vegetables. Beautiful and delicious!
In addition to the vegetables, there were various types of cheese and passed sliders. Lobster sliders with crispy bacon were simply heavenly; I could eat these for dinner every night.
Featured cocktails included the following:
RumBa Runner (Bacardi Gold Rum, Blackberry Brandy, Crème de Banana, Falernum, Fresh Orange Juice)
Boston Mama (Bacardi Coconut Rum, Bacardi 151, Bacardi 8 Rum, Coffee Liqueur, lemon juice, pineapple, grenadine) – this was my favorite!
Key Lime Cooler (Cruzan Vanilla Rum, Licor 43, Fresh Lime Juice, Pineapple Juice)
Pyrat Passion (Pyrat XO Rum, Passion Fruit Nectar, Fresh Lime Juice, Coconut)
Whether indoors or outdoors, RumBa is the perfect summer space and is ideal for after work drinks and bites of as a place to start a Saturday night on the town.
The kick off party was a great time, and I look forward to summer nights at RumBa!
