Black Beans for Breakfast

Ready for a spring health challenge update? I am having a pretty awesome week, and I have to chalk at least part of that up to the fact that I started making a bunch of little changes as soon as we returned from California last week.

More on those changes in a bit. One big change that I have been trying to make for quite some time is eating breakfast. I don’t love eating in the morning, but almost daily I find myself at 11:00 and literally shaking from not eating because I just wasn’t hungry earlier. No bueno.

As the above photo might indicate, we ate quite a bit of Mexican food in California, some healthy, some topped with cheese and sour cream, and some in-between. California Mexican food is SO GOOD, and we actually found ourselves eating it in lieu of big meals and expensive dinners. It was just what we wanted.

One morning, I woke up craving black beans, so we made our way to a little Mexican restaurant near our hotel. I was so hungry that I didn’t even take photos. The hubs had a traditional breakfast burrito, and I ordered a plate of black beans with a side of guacamole. With several types of salsa from the salsa bar, I discovered the perfect breakfast. I love the texture and the spice and the satisfying protein, fiber, and fat in this breakfast, and I have eaten it twice since we returned.

The other days I have been eating coconut mango oats . It’s amazing how much better I feel when I eat in the morning and how much more energy I have. Who would have imagined?! Winking smile 

In other health news, I have been drinking more water, thanks to a new co2 container for our Sodastream and have resumed my twice-daily green tea habit.

I have successfully added more protein to my diet through a few different channels, including Trader Joe’s vanilla whey protein powder. I am having a scoop of this in a glass of milk for part of my afternoon snack, and I am finding it fills me up.

Most of all, I have completely changed up my workouts. As I mentioned earlier in the week, I did Jillian Michael’s Yoga Meltdown on Sunday. In addition to that I have done a two mile speed workout and two 25 minute weights sessions, doing a lot of planks and squats and getting all sorts of sore!

I don’t know if it’s just me, but I start to notice a difference almost immediately when I start strength training, as opposed to focusing more on cardio. The clothes that were not quite fitting fit again, and I feel so much more energetic and strong. That said, I am pondering the idea of entering a few 5k’s just to see if this girl can run fast.

    first of all, that Mexican meal looks amazing. second, I thought I was the only person with a (weekday) breakfast aversion. I’m the same way as you, often times I’m simply not hungry. I let my body dictate when I eat, not the “breakfast is the most important meal of the day and will stimulate your brain” mantra. I work just fine in the mornings and I often just coffee holds me over until lunch. Basically, I eat breakfast if I’m ravenous but skip it if I’m not hungry.

    Love breakfast. I can’t go without it. I used to eat lentils all the time for breakfast, but I lost interest in that at some point. CA Mexican food IS amazing. After Foodbuzz my cousin took me to his favorite taco place in the Mission. I want to go back so badly.

    I have to force myself to eat breakfast too. It’s the most important meal of the day though (so they say).

    I notice results from strength training and hardly any from cardio. We must be strength training phenoms!

    I started healthing it up about a month ago, and that includes eating bfast too. I eat 1 Trader Joe’s Whole Wheat waffle with 1/2 tbsp peanut butter and a banana each morning. If I dont have a plan, I end up not eating bfast at all!

    I’ve never had beans for breakfast – but I love avocado and brown rice with egg. A great combo.

    I stopped drinking caffeine and started drinking fresh fruit or veggie juice (from my juicer) and I feel like I have more energy. It is amazing what good food can do!

    I never force myself to eat when I’m not hungry but I do find that eating something – whether a piece of fruit, a bowl of oatmeal or sometimes a slice of leftover pizza – before 10 AM usually helps me have the energy to get through my morning.

    I’m glad all of these changes are having such a positive effect!

    I always eat a big bowl of oatmeal for breakfast, usually spiked with some raisins and peanut butter. I find that it’s pretty much the only thing that will hold me over until my pre-lunch snack.

    I’ve been so focused on running lately that I haven’t been doing and strength training. But, I did just start a small routine that I’m trying to work in once a week.

    I really try to eat breakfast, otherwise my stomach starts grumbling around 10. Sometimes I just bring crackers to work with me, but when I have time to plan, I like to do fruit, yogurt, and homemade granola.

    I always have to eat breakfast – I can’t miss a meal!

    I need to get back on the workout bandwagon. I’m not as busy as I was in Boston so its so much easier to procrastinate on my workout…..

    I need to remember why I loved a morning workout in Boston – because then the rest of the day is all mine! That’s a big deal in the summer when I’d rather spend time out in the sunshine after work!

    I’m running a 5K in Worcester the day after your birthday dinner if you want to come! 😉 …may be a stretch after that night out, but you are welcome! Also, I love the list of things you changed up…I think I need to start adding strength training but am having a hard time knowing where to start.
