Sweet Treats

Prepare to drool. I loved writing my last two posts, making pizza and crackers during our visit to King Arthur Flour this past weekend, but I could not wait to share with you the decadent chocolate, whole grain (!) delights that we learned to make. Brownies from scratch. Now, we all know I have a huge interest in food, but I have never actually made brownies that did not come from a box. I had no idea how easy brownies from scratch were! I really have been in awe of people who made these things over the year, and I can not wait to spend the winter holed up in my house baking.

Once again, Susan broke the process into a couple of demos and hands-on time at our work stations. We started by melting a half pound of butter and two cups of brown sugar into a caramel-like substance, then adding the cocoa powder, flour, eggs, and other ingredients. While these ARE whole grain, they aren’t health food. Still, it’s nice to add a little bit of nutrition into a treat!

making brownies from scratch Oh the evolution of brown sugar and 1/2 pound of butter. We learned that you want to measure brown sugar differently than flour. You actually WANT to pack the sugar in so tightly that it holds its shape when dumped out of the cup.
Dutch process cocoa has an alkaline agent added to it and gives it a smooth, milder flavor. Look at that color!

As though creating our own deliciousness was not enough, we were invited to King Arthur’s other baking classroom where a class with visiting baker En-Ming Hsu was just finishing up. We thought we were just going to look at and photograph these beauties, but we got to EAT them too.

I am more confident with my baking skills, but I am not sure I will ever be able to create something this beautiful.

I have to say, my brownies didn’t look too shabby.

Susan instructed us to wait until the next day to eat them as the bran taste would be more evident the first day. I can’t believe it, but we were good bloggers and actually didn’t eat any of the brownies while in VT! Since I have gotten home. . . a completely different story. They are quite delicious!

    OOO everything looks great! I LOVE LOVE LOVE baking. I think it is so super comforting. My favorite to bake though? Probably cookies because you can eat the dough lol

    Oh wow, great job baking those delicious things!

    I’m definitely NOT a baker but managed to bake ugly but delicious muffins this week. I’ll be posting them later. I wish I could bake better and more complicated stuff but I just am not someone who likes following a recipe.. and more a cook than a baker 🙂

    I love making brownies from scratch, but now I totally want to add whole grain into mine. Seriously, one of the reasons I’m most excited for winter is to stay in my apartment baking! It’s the little things 🙂

    I guess with the weather cooling down now everyone is baking more often again. I’m seeing quite a few blogs with cookies, cakes, breads, and brownies…and oh yes, I’m drooling. And I’m definitely drooling over these as well.

    Personally, I love baking and when I do it’s usually something like cake or cookies. Now that it’s fall I also love baking pumpkin bread. Yum, yum, yum!

    BTW – I’ll be e-mailing you with my FFF answers some time tonight. Just going over my responses and making sure they are written well and not too cliche or dorky.

    I love King Arthur products, I use their bread mixes all the time.

    I like these opera cakes – beautiful…sounds like you could tackle them…

      King Arthur is a pretty cool place. My family vacations in VT throughout the year and the trip is made to pick up baking supplies at least once.

      I haven’t mae brownies with whole grains, but it makes lots of sense. On “the list” now!

          I love brownies, my guys are making me brownies for my birthday party on Sunday. I like to back cookies or bars personally because they are closer to individual servings yet feel like I’m making a ton. I switched to whole grain flour some time ago after switching us to higher fiber breads and whole grain pastas. Do it a little at a time and after a while your family is even ordering whole grain at restaurants.

              Yes, I didn’t mind doing the finger test to check if the chocolate was cool enough for the eggs 🙂 So delicious, even all by itself!
