First, I am a little late to the game to mention that May is National Salad Month, but I have been celebrating almost daily. I even entered a few photos of my favorite salads in Sabrina’s I Love Salad Challenge.
Today’s lunch salad was tossed together after I got home from the Basho launch party, and it took me about 10 minutes from start to finish. I tossed broccoli and grape tomatoes in some olive oil and crushed red pepper and roasted them together for 10 minutes.
In the meantime, I rinsed a can of pinto beans and chopped up a bunch of cilantro. Once the roasted components had cooled, I mixed in the beans and cilantro. Voila! A nutritious salad filled with fiber and protein, not to mention lots of vitamins and antioxidants! I LOVE cilantro, so the huge amount of flavor that it brought to the dish, along with the spice of the pepper, made me very happy. Next time I will add roasted corn and maybe a squeeze of lime juice. Yum.

I’d make a caesar salad using the spring mix as a base

I love Olivia’s! I’d like to try the Tangy Spinach blend – I’ve never seen it in my local store and it sounds interesting – maybe with an orange vinaigrette, dried cranberries, and goat cheese.
