Souped Up

I love soup. I love how comforting it is and how healthy it can be. I love how versatile you can be with soup ingredients and even how impressive serving a soup can appear despite the often very easy task of making it.

With the weather in  Boston in the full throes of a pre-real-winter freeze, the choice to make soup for lunch was an easy one, and the fact that we had butternut squash and a variety of yams/sweet potatoes shaped the course of the flavors I would use.

Unsurprisingly, I decided to make a creamy, vegetarian curry soup. You may recognize these flavors from my past cooking adventures:

I started out by boiling the potatoes and chunks of butternut squash while thinly sliced red onion simmered in a frying pan nearby.

Once all of the veggies were nice and soft, I tossed them into the blender with one can of Goya coconut milk and one can of water.

Then I added two TSP habanero oil, a few dashes of hot sauce, one TSP of red curry paste, and a dash of cayenne pepper. For some reason when I am feeling down and have a bad day, eating really spicy food really lifts my mood! While I was cooking I snacked on some tortilla chips with habanero oil. It made my eyes tear and my nose run, but it totally put me in a better mood!

Once the soup was thoroughly blended, I set aside a Tupperware full for my lunch and put the rest on the stove to heat up for tonight’s dinner which consisted of frozen pizza and this soup. I think Monday’s are going to be frozen pizza from now on. I am SO tired.

I literally feel like I have nothing left in my tank, so I am going to go to bed early! I will have to catch up on blog reading and cleaning another day.

Whew, I have eaten a LOT today. . . and I have not felt so great in a long time! My day started off early with some very sore calves from yesterday’s run. They seem to be the only part of me that ever hurt after running. Downward dogs help to stretch them out a little, but other than that it seems like the only thing that works is time.

Walking dogs at the MSPCA in the morning helped to loosen my legs up a little. My heart was also completely warmed to find out that Solgie, a 12 year old pit bull gentle giant was adopted after living at the shelter for months! There are a lot of sad moments in animal rescue, but it is so worth it when you see them get adopted!

Once dog walking was over, I got started on my butternut squash, yam, coconut curry soup with caramelized onions which I will be finishing tomorrow. I just ran out of time today!

We spent the afternoon having an incredible family lunch. We picked up dessert at Joseph’s, an Italian bakery on K Street in South Boston. In addition to a full deli, Joseph’s offers cakes, breakfast Danishes, sandwiches, Italian cookies, gingerbread houses, tiny Italian honey balls called strufoli, and cannoli, which we we bought today.

Joseph’s has awesome baked goods. I have had their tiramisu, chocolate cake, and now their cannoli, and they are fresh and delicious. In my opinion, they are as good as the more famous and more expensive North End bakeries in Boston!

Lunch lasted for hours and was delicious and tons of fun! I sipped on Mondavi Chardonnay, a nice, crisp, fruity wine without any hint of the oaky taste that some Chards have. We started with shrimp cocktail, and I ate around ten shrimp. So good. Then we had a green salad with grape tomatoes, mushrooms, onions, and a red wine vinaigrette.

The main course was a baked haddock with a shrimp and breadcrumb stuffing and cheesy scalloped potatoes. Everything was so flavorful and delicious. I love haddock, and this was flaky and buttery. The stuffing, full of sweet shrimp, onions, and bread. I finished off the meal with half of a cannoli, creamy, chocolatey bliss.

I got to see five of my nieces today as well. They range in age from one and a half to nine years old, and they are adorable. Christmas is so much more fun with kids around!

Just a few hours after lunch, we were scheduled to have dinner with our friend at Myers + Chang. I have eaten at Myers + Chang MANY times, and have written a few posts on it:

Its kind of fun to see how, while still not great, my photography is better than it used to be!

We arrived at Myers + Chang in the pouring rain tonight at around 7 only to find it PACKED. Luckily we got a table, but we weren’t super hungry so we had just a few things. I started with a toasty Butternuts Moo Stout. We split an order of fresh rolls filled with tofu, mint, and crunchy veggies with a spicy peanut chili sauce, lemony shrimp dumplings, one of my favorite foods on earth, and a round of fresh oysters with a spicy Thai mignonette. We also got a Thai ginger chicken salad which we packed to go. Amazingly enough, after eating all of that food today I am hungry again! I really need to be better at listening to my runner’s appetite. I don’t not eat on purpose, but I definitely underestimate how much it takes to keep me going! That leads to a cranky, tired, and unproductive Meghan!

I wish I had taken photos of my delicious food throughout the day, but I got caught up in things and was too busy enjoying the company to stop to photograph everything I ate!   

I am pretty tired after such a busy day and am off to have some hot chocolate and some time with my husband. I’ll be back tomorrow with a new soup recipe AND the winner of the Sur le table giveaway. Hi bloggies! I hope your Saturday is coming along swimmingly. What does that even mean? 🙂 As you may know, I started today off with a long run. My running partner could not make it, so I was running 8.5 miles solo. In 8 degree wind chills. When I woke up I was feeling really positive about the run, until I went to change from pajamas to running gear and was freezing! I had no idea how I was going to spend an hour and a half outside.

For the first mile of my run, I literally felt nothing. I was frozen, and I just moved as fast as I could. Eventually I warmed up, but I still felt great! I coasted through the entire run with a couple of short walking breaks. In the last 1/2 mile, my left knee started clicking and hurting quite a bit, so I walked and stretched some more before running to the very end. Overall I ran 9.5 minute miles for the whole thing, on average, with a very brutal headwind. Brrr. My wonderful husband did get up early and bundled up to ride his bike around me, and he met me at my halfway point to cheer me on for about 1/2 mile before riding on again. Love him!

Post-run, I had a new favorite smoothie, kale, spinach, soy milk, water, a banana, a cinnamon stick, and 1/2 up of non-alcoholic eggnog. YUM! Hubs also made me an egg and English muffin sammie with butter. Perfect recovery. I spent the day on the couch, then watching the Real Housewives of Orange County in bed. I always feel super guilty being lazy, but sometimes lazy days feel SO good.

We were invited to a few holiday parties tonight, but throughout the day with the cold and my exhaustion, it became clear that an early night would do me some good.

So, we decided to try a new place for dinner, Lord Hobo, which took over the B Side Lounge in Cambridge. Sometimes when I am running, all I want is a beer, and Lord Hobo has an incredible selection of draught and bottled beers in addition to an  impressive wine and cocktail list.

I started with the St. Bernardus ABT (bel) 10% – dark creamy quad, a beer which, despite its dark color, offered a fruity finish that some great Belgian beers have. It also offered the richness of a dark beer; it was absolutely perfect.

To start, we shared the fried sweet neck oysters with vinegar cabbage and remoulade. They were fried and placed back in their shells with remoulade and pickled cabbage. Nom nom nom.

For dinner, I ordered the mussels and fries with pilsner cream and aioli and hubs got the lobster macaroni and cheese. With our close to zero temperatures, tonight was all about comfort food!

We loved everything! The mussels were cooked perfectly. Sometimes I find them too chewy, but these melted in my mouth and the sauce, well I wanted to tip the bowl and drink it! The fries were in abundance, with a flavorful aioli, crispy and fried to perfection. And the mac and cheese was chock full of tender, sweet lobster, al dente noodles, and rich, creamy cheese.

The atmosphere was comfortable and festive, and I could definitely try more of the food and beers on the menu. If you live in the area and are craving good pub food like I was, check it out!

Other developments today. . . I found out by accident that my wonderful husband has bought not one, but three 1980 bottles of wine to celebrate my birthday. More on that later, but holy exciting!!

Tonight I will be watching It’s a Wonderful Life, my favorite movie of all time, then getting to bed early. Tomorrow I will be walking dogs, having a family Christmas lunch, and then heading to Myers + Chang to celebrate my friend Adrienne’s birthday. I am very excited to see her!
