Taco Tuesday

Tonight’s theme was Taco Tuesday, and I have to tell you I was looking forward to it all day. I had a fantastic run home in the pouring rain. It was fun to see people huddled under umbrellas as I splashed in puddles. I just love running in the rain! It completely washed the stress of the day away, and by the time I got home I was in a great mood! My Futuro knee sleeves have made an immense difference in how I feel when running. No more knee pain= less achey legs and less overall fatigue. I look forward to running a lot more.

I took a nice hot bath and then got started on the taco fixins:

My taco was too big to wrap up. It consisted of a Mission multi-grain tortilla, Trader Joe’s Mexican blend cheese, butter lettuce, half chopped avocado, La Preferida hot jalapenos, homemade salsa, chickpeas, kale, mushrooms, and a dollop of Fage 0%. This was a really delicious and filling meal, and I waited the perfect amount of time after running to eat. I get really nauseous after running for some reason, so waiting about an hour and a half works well for me.

We are going to do some more planning for our trip to San Francisco while watching Chopping Block tonight. Have a good Wednesday!

    oh I do love mexican night at home…I used to do it weekly for hubs but have kinda stopped. i need to start again!

    We love doing Mexican night too!!! It’s one of those meals that is so simple to make that while it’s always fun to do it at a restaurant complete with ginomrmous margaritas :), it also makes sense to save money (and calories!) to make it at home!

    I am the same with running – have you checked your heart rate? You might be running at a too high intensity. It’s also a good idea to at least drink some carbs, it will help keep the nausea down a bit. Wow that run sounds amazing! Now I want it to rain! And a very delish meal indeed.

    You know what I thought about when I read the title of your post? “Taco, burritos…what’s hanging out of your speedos.” haha, did you use to sing that song? My friends always did. We were pretty dumb.

    What a monstrous taco! Looks so healthy and delish…complete with avocado. I’m glad knee sleeves are working for ya. Do you have shin pain? Do you know if shin sleeves help? I’ve seen them but have never tried them.
